Ask Caray: What is Benedictine and how is it connected to Louisville?

"That green color puts some people off, but once you taste it..." said The Cafe's general manager Ray Watkins.
That's how they make it at The Cafe in Paristown.
"It's very popular around derby time. Here at The Cafe we serve it as a sandwich. We call that the Queen Anne," Watkins said.
Benedictine spread, not to be confused with the French liqueur of the same name, was created in Louisville by local caterer Jennie Carter Benedict.
The recipe took off and became a Louisville party staple.
But why is it green?
"You would have to ask Jennie, the originator of this, but you know cucumbers are green and I'm assuming it's green because it wants to look like a cucumber," Watkins said.
Similar to a veggie cream cheese spread, just green, it makes sense why this recipe has withstood the test of time and become a Louisville staple.
